Hey Bagel’s flagship location was designed to balance bold branding with production needs, all within a compact 1,150-square-foot footprint. The primary challenge was fitting a full kitchen with the equipment and clearances required for daily hot bagel production into such a small space, while still carving out room for a customer-facing area. Careful attention was given to kitchen adjacencies and workflow, ensuring the layout supported efficient operations without compromising compliance.
With the back-of-house prioritized for production, the front-of-house was intentionally kept small and streamlined for quick counter service. The result is a colorful, highly functional shop that captures the energy of the brand while setting the stage for its first location to become a model for future growth.
